The Bailey’s Poptail – the coolest way to get drunk (with a vegan option!)

By now I’m willing to declare the European heatwave endless. 30+ degrees during the day, barely below 20 degrees during the night. The temperatures are crazy, the sun is shining, and people are gathering outside for drinks.

Now, I personally love a good, cold drink. And I also enjoy the occasional popsicle. What’s the combination of these called? A poptail. Yes, a funny word, but I’m sure you’ve heard of it before. Commercial poptails are hitting the stores here too (finally!), but making your own is way more fun. This way you also get more control over the amount of sugar, and of course alcohol.

The only real reason for sharing the recipe for this Bailey’s poptail is that it’s the only one I’ve tried so far. I’m not a huge fan of mojitos or fruity cocktails – but if you manage to make decent wine-cicles (?), hit me up!

On a semi-serious note: these are amazing. I would recommend adding more coffee if you’re into the flavour, I personally love the slightly bitter note. Makes it feel more like you’re, ahem, sucking on an adult drink, not a super-sweet kids’ popsicle. No judgement though!

Recommended use:

Adult picnics (enjoy them fast, they will melt)

Get-togethers in your yard or patio

BBQ parties

ANY parties

As a takeaway snack when you’re headed out 😉

As a treat when you get home from work and want to cool down

Oh, and what do these taste like? Bailey’s.


(vegan details below)

You’ll need:

1 can Coconut milk

3 tbsp Instant coffee granules

2 tbsp Brown sugar

1 tsp Vanilla

Pinch of (sea) salt

1 dl (or to taste) Bailey’s

Popsicle molds



  1. Heat all ingredients, excluding Bailey’s, in a saucepan. Bring to a simmer constantly stirring.
  2. When all ingredients are combined, take the pan off the heat and let the mixture cool down.
  3. Add Bailey’s and taste.
  4. Pour mixture into popsicle molds and set in the freezer until solid.
  5. Enjoy!

Our cries have been heard – vegan Bailey’s is finally available. This recipe instantly becomes vegan if you sub regular Bailey’s for the vegan one!
